The menu boasts four types of gumbo for a variety of palates — vegetarian gumbo, seafood gumbo, chicken gumbo and traditional chicken and sausage gumbo. The Legend Of The Lost Cajun
I have been ask a thousand times, "How did a Cajun end up in Summit County,Colorado?". And I'm always happy to answer. Hi I'm Raymond Griffin, my wife, Belinda and I own the Lost Cajun Restaurant here in Frisco. And to answer the qeuston, I usally tell people that I got drunk and got lost!
But the truth is Belinda and I have dreamed of living up here for 20 years. For the past 15 years we owned and operated a fishing lodge in Louisiana, Griffin Fishing Charters. Then came Katrina, then Rita, then Ike and Gustof and to top it all off, the BP oil spill! What a mess. The state that we grew up in, the people we love and all the great food was hard to leave, but we had just had enough!
So here we are and here we will stay! Those of you that visit our beautiful town are in for a great surprise, Real Cajun Cooking, cooked the old way, slow and with a lot of care! Each of our Gumbos take 4 to 6 hours to cook as does our Ettoufee, reds beans and Bisc. Our Seafood is like none you have ever tasted and the Beneits are just New Orleans, maybe a weeee bit better. Just stop in and try some free samples and you'll see what I am talking about. You will also feel the friendly, down home atmosphere as soon as you walk.
